PARPALLÓ
La vida, a foc lent
A new chapter
In 2025, Parpalló began a new period. We renovated the interior, updated the kitchen and assembled a team with a clear idea: to take better care of everything that has made this place what it is.
We do not want to erase the past, but rather to build on it: to respect our heritage, to improve what we can, and to prepare Parpalló for the years ahead.
The new chapter of Parpalló is written by our team.
More than 60 years of history
Parpalló Restaurant began in 1963. But the history and stories of the place goes back centuries.
Long before the restaurant
La Drova was originally an agricultural area linked to the monks of Santa María de la Valldigna. Over time, it became a place for resting and enjoying summertime.
Nearby, the Parpalló cave turned the surrounding mountains into a hotspot of Mediterranean prehistory. Between 1929 and 1931, Lluís Pericot directed his major archaeological campaigns here.
1963 · Maria and Julio
In 1963, María Rubiella and Julio Donet took over the management of Bar Parpalló and, two years later, acquired the business.
María brought with her a culinary style that she had learned while living in Gandia: traditional recipes prepared with care - at that time, this was a bit unusual for a small bar in the mountains.
From Bar Parpalló to Ca Maria
Over the years, the restaurant also began to be known as Bar de María and Casa María. Since La Drova has few places to gather, the house became a meeting point for neighbours, holidaymakers, families and visitors.
The food cemented the reputation, the dining experience did the rest.
Parpalló today
Parpalló shines again, while Ca Maria continues to explain where we came from.
